Lemon Blueberry Mint Iced Tea

The combination of lemon, blueberry, and mint makes a delicious summer iced tea.
Submitted by Hezzid

  • 1 Bigelow Perfectly Mint tea bag
  • 2 c. water
  • 2 T. fresh blueberries
  • 1 T. fresh squeezed lemon juice
  • 2 T. sugar
  • Lemon wedge and mint leaves for garnish

Heat the water in a teapot until it is just simmering, do not boil.

Place the Perfectly Mint tea bag in a large mug and pour the simmering water over top of the tea bag. Steep for 5 minutes.
Meanwhile, add the blueberries, lemon juice, and sugar to a food processor. Process until smooth. At this point you can choose to strain out the solids or leave them in. It is your choice.

Fill a tall glass with ice cubes. Add the blueberry puree. Slowly pour the Perfectly Mint Tea over top of the ice and puree. Mix gently with a tall iced tea spoon.

Add additional ice if needed then garnish with a lemon wedge and mint leaves.

I mad this over the weekend and loved it! I substituted agave for sugar and added some mint leaves to the puree to increase that refreshing taste mint can have. I also added more lemon juice to achieve more tartness. It's a great base recipe and there seems to be room to improvise!
