Tea Concentrate:

10 bags Bigelow I Love Lemon Herbal Tea*

1 cup boiling water

Pasta
-
½ pound bow tie pasta, cooked according to package instructions, kept warm in large bowl

2-3 Tablespoons extra virgin olive oil
-
1 teaspoon freshly minced garlic (2 medium cloves)
-
¼ cup tea concentrate
-
⅛ teaspoon sugar
-
¼ cup thinly sliced fresh basil leaves
-
2 teaspoons freshly grated lemon zest
-
¼ teaspoon salt
-
⅛ teaspoon freshly cracked pepper
*Variations: Try using Bigelow Lemon Lift, or Lemon Ginger Herb Plus
Instructions
Place tea bags in a 1-cup glass measure. Add water. Steep tea for 10 minutes. Squeeze all liquid from tea bags into cup. Discard tea bags. (About ½ cup tea concentrate.) In small skillet place olive oil. Heat oil over medium high heat for 1 minute. Add garlic; cook, stirring frequently, 1 minute. Add ¼ cup tea concentrate and sugar. Continue cooking for 1 to 2 minutes to allow some of the tea to evaporate. Remove from heat. Pour tea and olive oil mixture over pasta in bowl. Add basil, lemon zest, salt, and pepper. Stir well. Serve with bread.
