Traditional Irish soda bread is not sweet, but with the addition of green tea and yogurt, it is a healthy muffin alternative.

Ingredients

2 cups of all purpose flour

2 tsp baking powder

2/3 cup sugar

1/2 tsp salt

1 egg
-
1/2 cup of Greek yogurt

1/2 cup brewed and cooled Bigelow Classic green tea

1 tsp vanilla
-
1/2 cup of c finely chopped dark chocolate
Directions
Combine all of the dry ingredients.
Whisk together the egg, yogurt, tea, and vanilla.
Add to the flour, and mix just until everything is combined.
Fold in the chocolate and fill muffin cups {lined with liners or sprayed with non-stick cooking spray}.
Bake at 425 for 5 minutes.
Reduce the heat to 375 and bake 10 minutes for mini-muffins, 12 - 15 for regular size, 17 - 20 for large muffins.
